Simplicity, freshness. A small number of best quality ingredients (when possible local and organic) and a very careful management of cooking process.
Seasonal products, often supplied directly by the farmers in the area. The basil, at the base of the famous Pesto, is bought from the producers of the area but cultivated with seeds of Pra ‘, the little town near Genoa renowned for producing the best basil.
Local fish. The most refined but also the so-called “poor” tradition: anchovy, mackerel and others.
Every day, depending on the availability of the various types of fish, the menu adapts.
